Sweet potato pancakes recipe

This decadent sweet potato pancakes recipe is so easy to make. It is low fat, gluten free, dairy free and perfect for those on a weight loss diet. This recipe is going to be a great addition to your healthy diet menu. 

I wanted to try something different from my regular egg whites and oatmeal breakfast this morning and this yummy pancakes is what I came up with. They were so decadent and just melted in my mouth. I ate seven of them and felt completely full. My son who is a very picky eater loved them too, he poured some maple syrup over them and finished every last bite!  So here's the recipe:

Sweet Potato Pancake Recipe

Ingredients: 

1/2 Medium sweet potato

1 Medium raw egg

1 Medium raw egg white

1 Tsp Sesame seeds

2 Tbsp Quinoa flakes (or boiled quinoa)

Pinch of salt

Pinch of cumin

Pinch of cinnamon 

Preparation:

Boil and mash sweet potato and let it cool down a little (so the eggs don't cook from the heat of potato). It really only take around 10 minutes to boil it. 

Sweet potatoes are very nutritious and we don't want to lose any of that while cooking them. So the very best way is to either bake them or boil them in a oxygen free water. The trick I do is I boil the water in an electric pot (which only takes a few minutes and it saves me time). And then I add the water to the pan and add a pinch of salt. I add my veggies last into already boiling and salted water (when most of the oxygen is dissolved due to heat and salt) and boiled them on a high heat. It literally takes few minutes to cook them this way!

Next, add the eggs and mix well. Add quinoa to thicken the batter, then add sesame seeds and spices, mix well. Warm up a small skillet on a medium high heat and drizzle a little olive oil. When the pan is hot spoon roughly one tablespoon of batter onto the pan. Let cook until you see bubbles forming and the pancake is firm enough to flip. Flip. cook for another couple of minutes or so, watching carefully.

Serve with low fat Greek yogurt and enjoy!
